Yes, Another Chicken Recipe!

Here is one of my "go to" recipes when I can't come up with something new to make for dinner. It is fairly simple and only uses a few ingredients. I served it one night when I had my mom over for dinner so I must think it is worthy of company. I have made a few dinners for my mom when I was first learning to cook. Some of the components of the meal didn't quite get cooked enough to actually eat. She was very good to my ego though and helped me to fix the problems. Luckily, everything I made this last go round was edible.

Cheese Please!

I sure do love me some cheese. I can eat almost anything if you add cheese to it. Plus I really like bacon, which I think I mentioned before. So, of course, I really like this recipe for Corn and Cheese chowder. It's very simple and has great flavor. The combination of the monterey jack and pepper jack cheeses are very tasty. I'm Sorry

Yesterday I wasn't very nice to Derrick. I greeted him with a complaint after he had picked up food for the kids and I on his way home from another busy day. I was looking for a way to say I'm sorry and I remembered this recipe I had seen in my Parenting magazine the other day. Derrick loves smoothies and will buy them when we are out instead of a meal or dessert. The recipe in Parenting had 3 different smoothies to make and I just happened to have all the ingredients for 1 of them. I will have to try the other 2 but that means grocery shopping for some ingredients I don't always have on hand. Ciara wanted to taste test daddy's drink and she managed to pour half of it down the front of her. Luckily we were outside when she did this. Derrick ended up with about half a smoothie, which he enjoyed, and I believe he forgives me.

Sweet Appeal Smoothie

Ingredients:

4 to 6 fresh or frozen strawberries
1/2 cup orange juice
1/2 banana, peeled and sliced
1/4 cup plain or vanilla yogurt (I used strawberry yogurt)
3 ice cubes (if using fresh fruit)

Combine all ingredients in a blender and liquify.

The More the Berrier Smoothie

Ingredients:

1 cup fresh or frozen blueberries, raspberries, and/or strawberries
1/2 cup cran-raspberry juice
1/4 cup plain or vanilla yogurt
3 ice cubes (if using fresh fruit)

Green Machine Smoothie

1 cup spinach or kale
3/4 cup apple or orange juice
1/2 banana, peeled and sliced
1/2 apple, peeled and diced
3 ice cubes

I made the Sweet Appeal Smoothie again today for lunch and it was delicious! I can't get enough of it. Looks like I will have to stock up on fruit during my next grocery shopping trip.

Noodles

I tried a new recipe a couple weeks ago and I wasn't really sure how it would go over with the kids. They have a way of surprising me and eating things that I would bet the house that they wouldn't. This is one of those meals. I think what they really liked about it was the noodles. I should know by now that I usually can't go wrong if the kids have some sort of slimy pasta on their plate. They might avoid everything else in the dish, but they love to slurp up those noodles.

It only got 3 stars on the site above but I think it deserves more. The sun-dried tomatoes give it that extra pop of flavor. Also, you can't go wrong when you add bacon!

He'll Eat Anything with Peanut Butter

Anyone who knows Derrick well knows that he loves peanut butter. I made oatmeal for him 2 days in a row and the first time I made a cocoa banana oatmeal. He said it was weird and he wasn't sure what all the flavors were. Not a good sign considering Derrick likes almost everything I have ever made for him to eat. The second oatmeal recipe was for banana peanut butter oatmeal. He loved it! Then he reminded me that he would eat just about anything if it included peanut butter. Still, not the biggest compliment of my food preparation but that's okay. At least I have found a breakfast item that he can take with him. Also, who wants to eat hot oatmeal during the summer. The recipe I found is for refrigerated oatmeal. There are other recipe options but for now I am sticking with the peanut butter and banana.

Who Likes Meatloaf?

I just had a conversation the other day with my sister-in-law about meatloaf. Actually, my brother brought it up because we grew up eating meatloaf as kids. He likes it but his wife won't cook it. She is a little grossed out by forming this big blob of raw meat into a loaf shape. The more she talked about it, the more grossed out I got. Thankfully that hasn't stopped me from making meatloaf because I have a great easy recipe that I think everyone should try.
